FST 2205 - Bread, The Staff of LifeCredits: 4 This course will explore the history of bread (and at the same time the history of everyday life) from the beginning in Mesopotamia and Egypt until today. The students will learn about the various kinds of bread associated with various cultures, such as baguette, whole wheat bread, sourdough, pretzel, pumpernickel, chapati, naan, Arabic flatbread, pita, focaccia, pan de leche, lavash, matzo, challah, tortillas, and more. In addition, they will study the various methods of production, baking and bread chemistry. They will learn how to make their own breads from scratch from various parts of the world and explore the method of making their own sourdough or tartine breads using just flour, water and salt, and no yeast.
