FST 1001 - Italia Culinaria: The Slow Food TourCredits: 2 “The Slow Food Movement” was created by Carlo Petrini and a group of activists in Italy in the 1980s. It aims to defend and preserve local food traditions and interest in where food comes from, how it is produced and how it tastes. It is a comprehensive approach to food that recognizes the strong connections between plate, planet, people, politics, and culture. This is a wonderful study trip for food lovers interested in learning more about the origins of the great culinary classics Italy has bestowed upon the world. We will visit producers of Buffalo Mozzarella, the famous balsamic vinegar from Modena, Parma ham, Salami, Limoncello, Grissini, not to mention the finest olives, olive oil, wines, and truffles. We will also participate in a Tuscan cooking course and a seminar at the University of Gastronomic Sciences on “Slow Food”.
